Working Method:
  • Mixing Spiral - 5' 1st speed -10-15 ' 2nd speed add butter after first development mix until developed. 
  • Dough Temperature - 75-80°F 
  • Scale - 1800g dough piece for 36 roll divider 50g 
  • Intermediate proof - 15-20' ambient temperature 
  • Make Up - loaf pan six pieces per pan or individual muffin pans 
  • Final Fermentation - 60-75 minutes 90°F, 80% humidity 
  • Decoration before baking - Sunset Glaze 
  • Oven temperature °C - 400˚F reduce to 375 
  • Baking Time - 20-30 minutes
