Autolyse: mix the puravita sprouted grains & flour with 58% of the water for 3 min and let rest for 30 min. Add yeast and mix for 6' in 1st speed & 5' 2nd speed. Add rest of the water the last 2 minutes of mixing.

Round up and rest 30' on ambient temperature.
Make Up
Round up and put on couch.
Final Fermentation
45' - 60' at 28°C and 80% humity.
Decoration before baking
Cut in a X.
Oven temperature °C
240°C - go down to 220°C. Add initial steam
Baking Time
35', open damper the last 5'.
Tips & Tricks
When mixing bigger doughs, please pay attention with mixing time.
Proof until you still have a litle bit strenght in your dough, so you have a better oven jump during baking.
