Roll out until 7 (on lamination machine) and cover with plastic. Place overnight at 5°C for +/- 18 hours.
Manipulation after overnight fermentation
Take out of the fridge and let rest for 5 min. at ambient temperature. Roll your lamination fat out until 7mm (on lamination machine).
Working method on lamination machine
Give 1 single, and 1 double fold (12 layers).
Roll out your block to 3 mm (on lamination machine).
Make up
Cut triangles out of 11-25 cm. Roll up with medium strength and place on perforated baking tray.
Final fermentation
2h30 min. At 32°C and 85% humidity.
